I have also been frustrated with this bananas. I keep buying it trying to figure out what to do with it. The center always is fibrous, it isn't fragrant when I bake it by itself or in things, and it's usually raw in the center when I fry them even when they turn I let them turn black. The only thing it seems to have excelled out is frustrating me. If you fine something it does better than the its brothers please make a note.

Yeah, the saba we buy here in the US also turn red when cooked. It could be because they're picked too early or aren't allowed to ripen enough. Or it could be a completely different variety of banana.

i'm with kat... ZERO idea. in fact, i was going to comment to thank you for even letting me in on the thought of all the diff. types of bananas! when you do find the right ones, i can only imagine how delicious and sweet the taste would be.
