Every year right before Easter, my mom, sister & I would make the pilgrimage to our local Italian store to purchase the salt cod for Bacalao. Mom saw this as an ordinary shopping trip, my sister and I viewed the trip as an adventure!<br /><br />The cod was always hidden away in boxes at the very back of the store in a dark, dark corner. We would slowly go through the box, pick through the fish one by one looking to find “the one” perfect in size for the family.<br /><br />It’s 20-odd years later, the local Italian store went through a major renovation and all dark corners have been banished. Around Easter you can still find salt cod in boxes for sale, but if you don’t want to get your hands fishy you can pick up a pre-packaged chunk of cod in the fridge section year round.<br /><br />The only time I have this dish is at my moms and seeing the link to the recipe reminded me of how much I like it!
