Aguadito is a staple in Peru, particularly in Lima. The cilantro scented trio of Peruvian cuisine consists of Aguadito, Seco (lamb, chicken or beef cilantro slow cooked stew) and Arroz con Pollo (chicken and cilantro scented rice). The latter will be featured in my next Peruvian Cuisine Tasting and Wine Pairing on August 26th.
